I'm trying to adapt some recipes of things I used to enjoy making.

Right now, I’m working on a solid no kneed bread. It’s getting there. So far it has been very edible, but I think I can improve it. What I’ll be trying next time is:

Bread Recipe
450g (approx. 3 cups) bread flour
12g (approx. 2 tsp) kosher salt
7g (approx. 2 tsp) instant yeast
150g plain unsweetened yogurt
480g (approx. 2 cups) water

Mix all ingredients together. This should look too thick for a brownie batter, but way too runny for a bread recipe.
Transfer to a seasoned Dutch oven, or large non-stick pot with an oven safe lid, cover, and let rise in a warm place for 2 hours.
Put the Dutch oven in a cold oven and set the temperature to 450 F.
Once the oven reaches temperature, uncover the bread and bake for 30 more minutes, or until a rich brown crust forms.
Transfer to a cooling rack by flipping the Dutch oven upside down and let the bread cool for 10 minutes.

Other than that, I’ve been writing (I’m almost ready to post more poems), and walking.
